Instructions — How to Infuse
MOCKTAIL SYRUP

1st Infusion
Add hot water to the top of the jar and stir until the sugar is dissolved. Let it sit and infuse for 20 minutes, stirring well and often.
Strain the infusion, squeezing the herbs thoroughly. Reserve the herbs for the 2nd infusion.
2nd Infusion
Add the reserved herbs back into the jar with 1 cup of organic sugar. Add hot water to the top of the jar and stir until the sugar is dissolved. Let sit and infuse for 1 hour, stirring well and often.
Strain again, squeezing the herbs, and combine with the 1st infusion syrup.
COCKTAIL INFUSION

Add your choice of alcohol to the top of the jar and replace the lid. Let the alcohol infuse with the herbs for 3 days.
Shake well and often, making sure the sugar is dissolved.
Strain the infusion, squeezing the herbs thoroughly. Reserve the herbs for the 2nd infusion.
2nd Infusion
Add the herbs back into the jar with 1 cup of organic sugar. Add fresh alcohol to the top of the jar and replace the lid. Let sit and infuse for 7 days.
Shake well and often, ensuring the sugar is dissolved.
Strain and combine with the 1st infusion.
Recipe
2 oz Herbal Infusion
½ oz Lemon or Lime Juice
3 oz Water (if using Cocktail Infusion)
Shake with ice and strain into an 8 oz cocktail glass. Garnish with your favorite fresh herb.
